Instructions
Cook the vegetables.
- In a large pot or Dutch oven, melt the butter over medium heat. Add the onion, leek, and celery. Cook for 5 to 7 minutes, stirring occasionally, until softened. Add the garlic and cook 30 seconds more.
Build the stew.
- Add the potatoes, diced tomatoes with their juices, broth, bay leaf, thyme, salt, and pepper. Stir well and bring to a simmer.
Simmer until potatoes are tender.
- Reduce heat to medium-low and simmer uncovered for 12 to 15 minutes, or until the potatoes are just tender.
Add the seafood.
- Gently add the fish chunks and mussels or shrimp, if using. Simmer very gently for 5 to 7 minutes, until the fish is opaque and flakes easily.
- If using mussels, cook until they open; discard any that stay closed.
- If using shrimp, cook until pink and firm.
Finish the stew.
- Stir in the cream, if using, parsley, and lemon juice. Taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaf.
Serve.
- Ladle into bowls and serve hot with crusty bread and lemon wedges.
