Ingredients
- 1 head cauliflower large, broken into smaller florets
- 1 tablespoon curry powder
- ½ tablespoon ground cumin
- ½ tablespoon smoked paprika
- 2 tablespoons olive oil
- Sea salt to taste

- 2 cups hummus homemade or store-bought
- 2 cup red cabbage thinly sliced
- 1 medium cucumber thinly sliced
- 2 radishes thinly sliced
- ½ cup pickled red onions or fresh red onion
- 1 cup fresh parsley chopped
- Pita bread or crackers for serving
Instructions
- Preheat the oven to 400°F.
- For easy clean-up, line a large rimmed baking sheet with a piece of parchment paper.
- In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt and black pepper, to taste.
- Arrange florets on the prepared baking sheet. Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.
- Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
- Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy!
