  • Preheat the oven to 400°F.
  • For easy clean-up, line a large rimmed baking sheet with a piece of parchment paper.
  • In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt and black pepper, to taste.
  • Arrange florets on the prepared baking sheet. Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.
  • Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
  • Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy!
