Ingredients
For the shrimp
- 1 pound large shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1 tablespoon lime juice
For the burritos
- 4 large flour tortillas burrito-size
- 2 cups cooked rice
- 1 cup canned black beans drained and rinsed
- 1 cup shredded Mexican-blend cheese or Monterey Jack cheese
- 1 cup lettuce or cabbage, shredded
- 1 medium tomato diced
- 1 avocado sliced
- 1/2 cup salsa
- 1/4 cup sour cream
- Lime wedges optional
- cilantro chopped, optional
Instructions
- Season the shrimp: Pat the shrimp dry. Toss with olive oil, chili powder, cumin, garlic powder, paprika, and salt.
- Cook the shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for about 2 minutes per side, until pink, opaque, and cooked through. Remove from the heat and stir in the lime juice.
- Warm the fillings: Heat the cooked rice and black beans. Warm the tortillas in a dry skillet for about 20 seconds per side, or microwave them under a damp paper towel for 20–30 seconds.
- Assemble: Place about 1/2 cup rice down the center of each tortilla. Divide the beans, shrimp, cheese, lettuce, tomato, avocado, salsa, and sour cream among the tortillas.
- Fold: Fold the sides of each tortilla inward, then roll tightly from the bottom to form a burrito.
- Optional—toast: Place the burritos seam-side down in a dry skillet over medium heat. Cook for 1–2 minutes per side until lightly crisp and golden.
- Serve immediately with lime wedges, extra salsa, and cilantro.
