Common fillings include:
Seasoned grilled, sautéed, or fried shrimp

Instructions

  • Season the shrimp: Pat the shrimp dry. Toss with olive oil, chili powder, cumin, garlic powder, paprika, and salt.
  • Cook the shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for about 2 minutes per side, until pink, opaque, and cooked through. Remove from the heat and stir in the lime juice.
  • Warm the fillings: Heat the cooked rice and black beans. Warm the tortillas in a dry skillet for about 20 seconds per side, or microwave them under a damp paper towel for 20–30 seconds.
  • Assemble: Place about 1/2 cup rice down the center of each tortilla. Divide the beans, shrimp, cheese, lettuce, tomato, avocado, salsa, and sour cream among the tortillas.
  • Fold: Fold the sides of each tortilla inward, then roll tightly from the bottom to form a burrito.
  • Optional—toast: Place the burritos seam-side down in a dry skillet over medium heat. Cook for 1–2 minutes per side until lightly crisp and golden.
  • Serve immediately with lime wedges, extra salsa, and cilantro.
