Ingredients
- 2 chicken breasts large, boneless and skinless, (about 1½ pounds total)
- ½ cup all-purpose flour
- 1 teaspoon salt divided
- ½ teaspoon black pepper
- 2 large eggs
- 1 tablespoon water
- 1½ cups Italian-style breadcrumbs or panko
- ½ cup grated Parmesan cheese optional
- ½ teaspoon garlic powder
- ⅓ cup vegetable oil or olive oil, plus more as needed
- Lemon wedges for serving
Instructions
- Prepare the chicken: Slice each chicken breast horizontally into 2 thin cutlets. Place them between sheets of plastic wrap and pound to about ¼-inch thickness.
- Set up the breading: In a shallow bowl, combine the flour, ½ teaspoon salt, and pepper. In a second bowl, whisk the eggs with the water. In a third bowl, combine the breadcrumbs, Parmesan, garlic powder, and remaining ½ teaspoon salt.
- Bread the cutlets: Coat each piece in flour, shaking off excess. Dip into the egg mixture, then press into the breadcrumbs until evenly coated.
- Cook: Heat the oil in a large skillet over medium to medium-high heat. Fry the cutlets in batches for 3–4 minutes per side, until golden brown and the internal temperature reaches 165°F.
- Drain and serve: Transfer to a paper towel-lined plate or wire rack. Serve hot with lemon wedges.
