Herb Butter
- 4 tablespoons unsalted butter softened
- 2 tablespoons fresh parsley finely chopped
- 1 tablespoon fresh chives finely chopped
- 1 small garlic clove minced
- 1 teaspoon lemon zest grated

Chicken
- 4 chicken breast cutlets about 5–6 ounces each
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- lemon wedges for serving
Instructions
- In a small bowl, combine the softened butter, parsley, chives, garlic, lemon zest, lemon juice, salt, and pepper. Mix until evenly blended. Set aside.
- Pat the cutlets dry with paper towels. If necessary, pound them to an even thickness of about 1/4 inch. Season both sides with salt and pepper.
- Place the flour in a shallow dish. Lightly dredge each cutlet in flour, then shake off the excess.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add two cutlets and cook for 3–4 minutes per side, until golden brown and the internal temperature reaches 165°F. Transfer to a plate. Repeat with the remaining oil and cutlets.
- While the chicken is hot, spoon about 1 tablespoon of herb butter over each cutlet. Let it melt over the top.
- Serve immediately with lemon wedges. This dish pairs well with roasted potatoes, rice, steamed vegetables, or salad.
