Ingredients
- 1 lb chicken breasts boneless, skinless or thighs, cut into bite-size pieces
- 1 lb fresh turnip greens washed, tough stems removed, and chopped
- 1 tablespoon olive oil
- 1 medium onion diced
- 2 jalapeños seeded and minced—leave some seeds for extra heat
- 3 cloves garlic cloves minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes undrained
- 1 can (15 oz) white beans drained and rinsed
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- ½ teaspoon dried thyme
- ¾ teaspoon salt plus more to taste
- ¼ teaspoon black pepper
- 1 tablespoon lime juice or apple cider vinegar
- Hot sauce optional
Instructions
- Heat the olive oil in a large pot over medium-high heat. Season the chicken lightly with salt and pepper. Add it to the pot and cook for 4–5 minutes, stirring occasionally, until lightly browned. Transfer to a plate.
- Reduce the heat to medium. Add the onion and jalapeños to the same pot and cook for 4 minutes. Add the garlic, paprika, cumin, and thyme; cook for 30 seconds.
- Pour in the chicken broth and tomatoes. Return the chicken to the pot. Bring to a gentle boil, then reduce the heat and simmer for 10 minutes.
- Stir in the turnip greens and white beans. Simmer uncovered for 12–15 minutes, or until the greens are tender and the chicken is cooked through.
- Stir in the lime juice or apple cider vinegar. Taste and adjust the salt, pepper, and heat level.
- Ladle into bowls and serve hot, preferably with cornbread or crusty bread. Garnish with sliced jalapeño if desired.
