Kükü delicious Azerbaijani food dish. Kükü is a type of herb omelette made with a variety of fresh herbs, eggs, and sometimes meat or vegetables.

Ingredients
  

  • 8 eggs
  • 2 cups mixed fresh herbs such as parsley, dill, cilantro
  • 1 onion finely chopped
  • 1/2 cup feta cheese crumbled
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

  1. In a bowl, whisk the eggs until well combined.
  2. Chop the mixed fresh herbs finely and add them to the eggs along with the chopped onion and crumbled feta cheese. Season with salt and pepper.
  3. Heat some olive oil in a non-stick skillet over medium heat.
  4. Pour the egg mixture into the skillet and cook until the bottom is set.
  5. Carefully flip the kükü and cook the other side until cooked through.
  6. Remove from the skillet and slice into wedges. Serve hot. Enjoy!
