Swiss steak
Ingredients
- 1 1/2 pounds round steak cut into serving-size portions
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion sliced
- 2 cloves garlic minced
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 carrots sliced
- 1 bell pepper sliced
- fresh parsley chopped for garnish (optional)
Instructions
- Season the round steak pieces with salt and pepper, then coat them in flour, shaking off any excess.
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Brown the steak pieces on both sides, working in batches if needed. Remove the steak and set aside.
- In the same skillet, add the onion and garlic. Cook until softened, about 3-4 minutes.
- Add the diced tomatoes (with their juices), beef broth, Worcestershire sauce, paprika, and thyme to the skillet. Stir to combine.
- Return the steak to the skillet, making sure it’s submerged in the sauce. Add the carrots and bell pepper.
- Cover and simmer over low heat for about 1 1/2 to 2 hours, or until the steak is tender.
- Serve the Swiss Steak hot, garnished with chopped parsley if desired. It pairs well with mashed potatoes, rice, or crusty bread.
- Enjoy!
