Lemon chicken
Ingredients
- 1 whole chicken (about 3-4 lbs)
- 2 lemons
- 4 cloves garlic minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the whole chicken under cold water and pat it dry with paper towels.
- In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
- Rub the garlic and herb mixture all over the chicken, making sure to coat it well.
- Cut one lemon into slices and stuff them inside the cavity of the chicken.
- Squeeze the juice of the other lemon over the chicken.
- Place the chicken in a roasting pan and cover it with foil.
- Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

- Let the chicken rest for 10-15 minutes before carving and serving.
- Enjoy!
