- 3 pounds lobsters 2 live lobsters about 1 1/2 pounds each
- 8 oz egg noodles (Sang Mee noodles)
- 2 tablespoons vegetable oil
- 4 cloves garlic minced
- 1 inch piece ginger grated
- 1 red bell pepper thinly sliced
- 1 cup snap peas trimmed
- 1 small carrot julienned
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Green onions chopped (for garnish)
Instructions
- Cook the live lobsters in boiling water for about 8-10 minutes until they are cooked. Remove the meat from the lobsters and chop them into bite-sized pieces.
- Cook the egg noodles according to package instructions. Drain and set aside.
- In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger and stir-fry for about 30 seconds.
- Add the lobster meat, red bell pepper, snap peas, and julienned carrot to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
