Twin lobster with ginger and scallion
Ingredients
- 2.5 lbs live lobsters (about 1 1/4 pounds each)
- 2 tablespoons vegetable oil
- 4 cloves garlic minced
- 2 tablespoons fresh ginger sliced into thin strips
- 4 scallions cut into 2-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sugar
- Salt and pepper to taste
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
- Prepare the lobsters by splitting them in half lengthwise. Clean out the tomalley and other organs. Cut the lobster meat into bite-sized pieces.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
- Add the lobster pieces to the wok and stir-fry for 2-3 minutes until they start to turn pink.
- Stir in the scallions, soy sauce, oyster sauce, and sugar. Cook for another 2-3 minutes until the lobster is fully cooked and coated in the sauce.
- If you prefer a thicker sauce, you can add the cornstarch mixture to the wok and stir until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the twin lobster with ginger and scallion hot, garnished with additional sliced scallions if desired. Enjoy!
