- 1 pound beef sirloin or flank steak, thinly sliced against the grain

Instructions
- Crumble the saffron into the warm beef broth. Let it steep for 5–10 minutes.
- Pat the beef dry and season it with ½ teaspoon sea salt and the black pepper.
- Heat the oil in a large, deep skillet or Dutch oven over medium-high heat. Add the beef in a single layer and cook for 2–3 minutes, stirring once, until browned but not fully cooked. Transfer it to a plate.
- Add the red onion and all three bell peppers to the same pot. Cook for 3 minutes. Add the garlic and ginger and cook for 30 seconds.
- Stir in the red curry paste, garam masala, turmeric, cumin, and remaining ½ teaspoon salt. Cook for 30 seconds. Add the rinsed rice and stir for 1 minute so it is coated in the seasonings.

- Quickly uncover and scatter the green beans and browned beef over the rice. Cover again and cook for 6–8 minutes, or until the rice is tender, the liquid is absorbed, and the beef is cooked through.
