- 1 tablespoon cold unsalted butter
- Crusty French bread for serving
Instructions
- Drain and rinse the snails thoroughly. Pat them dry with paper towels.
- Melt 2 tablespoons butter with the olive oil in a large skillet over medium heat. Add the shallots and ham or bacon. Cook for 4–5 minutes, until softened and lightly browned.
- Add the garlic and cook for 30 seconds. Stir in the tomato paste and cook for 1 minute.
- Pour in the red wine, scraping up any browned bits from the pan. Add the broth, bay leaf, thyme, salt, and pepper. Bring to a gentle simmer and cook uncovered for 10–12 minutes, or until reduced by roughly one-third.
- Add the snails and simmer gently for 5–7 minutes. Avoid boiling vigorously, which can make them tough.
- Remove the bay leaf and thyme sprigs. Take the pan off the heat and stir in 1 tablespoon cold butter, followed by the parsley. Taste and adjust the seasoning.
- Divide among four shallow bowls or ramekins and spoon the sauce over the top. Serve hot with crusty bread for soaking up the sauce.
