Roast beef
- 1½ lb beef top round boneless or eye of round
- 1 tbsp neutral oil
- 1 tsp kosher salt

- ½ tsp garlic powder
- 2 cups beef stock
- 1 tbsp Worcestershire sauce
Kummelweck rolls
- 4 crusty Kaiser rolls
- 1 egg white mixed with 1 tbsp water

- Season the beef: Heat the oven to 450°F (230°C). Pat the beef dry, rub it with oil, and season with salt, pepper, and garlic powder.
- Roast: Place the beef on a rack in a roasting pan. Roast for 15 minutes, then reduce the temperature to 325°F (165°C). Continue roasting until the center reaches: 125–130°F (52–54°C) for medium-rare, 135°F (57°C) for medium. This usually takes another 25–40 minutes, depending on thickness.
- Rest and slice: Transfer the beef to a cutting board, tent loosely with foil, and rest for 15–20 minutes. Slice very thinly against the grain.
