Chicken marinade
- 1½ pounds chicken thighs boneless, skinless, cut into 1½-inch pieces

- 1 tablespoon cilantro chopped, for serving
Instructions
- Marinate the chicken: Mix the yogurt, lemon juice, garam masala, turmeric, and salt in a bowl. Add the chicken and coat well. Refrigerate for at least 30 minutes or up to 8 hours.
- Soak the cashews: Place the cashews in ½ cup hot water for 15 minutes. Blend the cashews and soaking water until smooth. Set aside.
- Brown the chicken: Heat 1 tablespoon oil in a large skillet or Dutch oven over medium-high heat. Remove excess marinade from the chicken, then cook it in batches for 2–3 minutes per side. It does not need to be fully cooked. Transfer to a plate.

- Finish cooking: Return the chicken and any juices to the skillet. Cover and simmer over medium-low heat for 10–12 minutes, or until the chicken reaches 165°F internally.
- Add the cream: Stir in the heavy cream and honey, if using. Simmer uncovered for another 2–3 minutes. Taste and adjust the salt or cayenne.
- Serve: Garnish with cilantro and serve with basmati rice, naan, or both.
- Nut-free option: Omit the cashews and increase the heavy cream to ¾ cup.
