- 2½ to 3 pounds chicken thighs and drumsticks bone-in, skin-on
- 1 teaspoon kosher salt plus more to taste

- 2 tablespoons unsalted butter divided

Instructions
- Pat the chicken dry and season it with salt and pepper.
- Heat 1 tablespoon butter and the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chicken skin-side down and cook for 4–5 minutes per side, until lightly golden. Transfer to a plate. Work in batches if necessary.
- Add the remaining tablespoon of butter. Cook the mushrooms for 5–7 minutes, until tender and lightly browned. Transfer them to a separate plate.
- Add the onion and carrot to the pan. Cook for about 5 minutes, until softened. Add the garlic and cook for 30 seconds.

- Return the mushrooms to the pan. Stir in the heavy cream and simmer uncovered for 5–8 minutes, until the sauce slightly thickens. Do not let it boil vigorously.
- Remove the bay leaf. Stir in the lemon juice, taste, and add more salt or pepper as needed. Garnish with parsley.
