Spaghetti all’Arrabbiata

Ingredients
- 400 g spaghetti (14 oz)
- 3 tbsp extra-virgin olive oil
- 3–4 garlic cloves thinly sliced
- 1–2 red chili peppers finely chopped (or ½–1 tsp red pepper flakes, to taste)
- 400 g canned peeled tomatoes or crushed tomatoes, (14 oz)
- Salt to taste
- Freshly ground black pepper to taste
- fresh parsley chopped
- Pecorino Romano Freshly grated, for serving (Optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti and cook until al dente, according to package instructions.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the garlic and chili, and sauté for about 1 minute, just until the garlic turns golden and fragrant (don’t let it burn!).
- Pour in the tomatoes, season with salt and pepper, and stir.
- Let the sauce simmer gently for about 10–15 minutes, stirring occasionally, until slightly thickened.
- Drain the pasta (reserve a little cooking water) and add it to the skillet with the sauce.
- Toss well over low heat, adding a splash of pasta water if it looks too thick.
- Adjust seasoning if needed.
- Remove from heat, stir in chopped parsley.
- Serve hot, topped with Pecorino Romano if you like.
