Ingredients
Base
- 1 ready-made pizza dough or homemade, about 12–14 inches
- 1 tablespoon olive oil
Cheese
- ½ cup crème fraîche or softened cream cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon fresh dill chopped plus extra for garnish
- Salt and freshly ground black pepper to taste
- 150–200 grams smoked salmon about 5–7 oz, thinly sliced
- ½ small red onion very thinly sliced
- 2 tablespoons capers drained

Instructions
- Preheat your oven to 220°C / 425°F. Roll out the pizza dough on parchment paper to your desired thickness and brush lightly with olive oil.
- Place the dough (with parchment) on a baking sheet or pizza stone. Bake for 8–10 minutes, or until golden and crisp. Remove and let it cool slightly.
- In a small bowl, combine the crème fraîche (or cream cheese) with lemon juice, lemon zest, dill, salt, and pepper.
- Spread the cream mixture evenly over the cooled crust. Layer on the smoked salmon slices, red onion, and capers.
- Add some fresh dill and a handful of arugula if you like. Drizzle lightly with olive oil and a squeeze of lemon before serving.
- Cut into wedges and serve immediately — it’s great warm or at room temperature.
