Instructions
Prepare chicken and abalone
- Pat the chicken dry, then coat lightly with cornstarch (and egg white, if using).
- If using fresh abalones, clean and tenderize gently by slicing cross-hatch patterns on top.
- If using canned abalones, simply slice each one horizontally into 2–3 pieces.
Pan-fry the chicken
- Heat 2 tablespoons cooking oil in a wok or pan over medium-high heat.
- Pan-fry the chicken pieces until golden brown and just cooked through. Remove and set aside.
Sear the abalones
- In the same wok, add a bit more oil if needed.
- Sear the abalones quickly on both sides (about 30 seconds per side) until lightly golden. Remove and set aside.
Make the sauce
- In the wok, add a teaspoon of oil.
- Stir-fry ginger and garlic until fragrant (about 15 seconds).
- Add the oyster sauce, soy sauces, Shaoxing wine, sugar, sesame oil, and chicken stock.
- Bring to a simmer. Stir in the cornstarch slurry to thicken.
Combine and finish
- Return the chicken and abalones to the wok.
- Toss gently to coat everything with the sauce.
- Sprinkle green onions in at the end.
- Adjust seasoning — a pinch of salt or sugar if needed.
Serve
- Arrange on a platter, pour the sauce over top, and serve hot with steamed rice or vegetables.
