Ingredients
- 2 pounds pork leg cut into chunks
- 4 boiled eggs
- 4 cups water
- 1 tablespoon palm sugar
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon dark soy sauce
- 1 cinnamon stick
- 3 star anise
- 5 cloves
- 1 teaspoon black peppercorns
- 2 tablespoons vegetable oil
- 4 cloves garlic minced
- 1 thumb-sized ginger sliced
- 2-3 coriander roots chopped
- Salt to taste

Instructions
- In a pot, bring water to a boil and add the pork leg chunks. Boil for 10 minutes, then drain and set aside.
- In another pot, heat vegetable oil over medium heat. Add garlic, ginger, and coriander roots, and sauté until fragrant.
- Add the boiled pork leg, cinnamon stick, star anise, cloves, black peppercorns, palm sugar, soy sauce, oyster sauce, and dark soy sauce. Stir to combine.
- Pour enough water to cover the pork leg, bring to a boil, then reduce heat and simmer for about 1.5-2 hours until the pork is tender.
- Add the boiled eggs to the pot and continue simmering for another 30 minutes.
- Season with salt to taste.
- Serve the Kha Mu Phalo hot, garnished with chopped cilantro. Enjoy with steamed rice.
