Lahoh is a delicious Somali flatbread that is similar to a pancake. It is made from a simple batter of flour, water, yeast, and sometimes a bit of sugar. It is typically cooked on a griddle and can be enjoyed with various toppings or fillings.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 1/2 cups warm water

Method
 

  1. In a mixing bowl, combine the flour, instant yeast, sugar, and salt.
  2. Gradually add the warm water to the dry ingredients while whisking to form a smooth batter. The batter should be thin, similar to pancake batter.
  3. Cover the bowl with a clean kitchen towel and let it rest at room temperature for about 1-2 hours, allowing the batter to ferment and bubble up.
  4. Heat a non-stick griddle or skillet over medium heat.
  5. Pour a ladleful of the batter onto the griddle and spread it out into a thin, round shape.
  6. Cook the Lahoh for 2-3 minutes on one side until bubbles form and the edges start to brown. Flip and cook for another 1-2 minutes on the other side.
  7. Repeat with the remaining batter, stacking the cooked Lahoh on a plate.
  8. Serve the Lahoh warm with your favorite toppings such as honey, jam, or butter.
  9. Enjoy!
