- 2 lbs beef short ribs
- 1 onion chopped
- 2 cloves garlic minced
- 2 cups beef broth
- 1 tablespoon tomato paste
- 2 tablespoons flour
- 1 tablespoon butter
- Salt and pepper to taste

Instructions
- Season the beef short ribs with salt and pepper. In a large pot or Dutch oven, sear the short ribs over medium-high heat until browned on all sides. Remove the ribs and set aside.

- Stir in the flour and tomato paste, cooking for another minute.
- Return the short ribs to the pot and add the beef broth. Bring to a simmer, then cover and cook on low heat for 2-3 hours, or until the meat is tender and falling off the bone.
- Once the short ribs are cooked, remove them from the pot and shred the meat using two forks. Discard any bones and excess fat.

- To assemble the poutine, place a layer of fries on a serving platter. Top with the shredded beef short ribs, cheese curds, and ladle the gravy over the top.
- Garnish with chopped parsley if desired and serve immediately.
