Method
- Preheat your oven to 375°F (190°C).
- Season the chicken parts with salt, pepper, and dried thyme.
- In a bowl, mix together the chopped artichoke hearts, minced garlic, Parmesan cheese, olive oil, and chicken broth.
- Place the seasoned chicken parts in a baking dish.
- Spoon the artichoke mixture over the chicken, making sure to cover each piece evenly.
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for another 20-25 minutes, or until the chicken is cooked through and the skin is crispy.
- Serve the artichoke chicken hot, garnished with fresh parsley if desired.
