Pork curry

Method
- Heat oil in a large pot over medium heat. Add the onions and cook until softened.
- Add the garlic and ginger, and cook for another minute until fragrant.
- Add the pork pieces to the pot and brown on all sides.
- Stir in the curry powder, turmeric, cumin, coriander, salt, and pepper. Cook for a few minutes to toast the spices.
- Add the chopped tomatoes and coconut milk to the pot. Stir to combine.
- Bring the curry to a simmer, then reduce heat and cover. Let it simmer for about 1 hour or until the pork is tender.
- Adjust seasoning if needed.
- Serve the pork curry hot over steamed rice and garnish with fresh cilantro.
