Heat oil in a large pot over medium heat. Add the onions and cook until softened.
Add the garlic and ginger, and cook for another minute until fragrant.
Add the pork pieces to the pot and brown on all sides.
Stir in the curry powder, turmeric, cumin, coriander, salt, and pepper. Cook for a few minutes to toast the spices.
Add the chopped tomatoes and coconut milk to the pot. Stir to combine.
Bring the curry to a simmer, then reduce heat and cover. Let it simmer for about 1 hour or until the pork is tender.
Adjust seasoning if needed.
Serve the pork curry hot over steamed rice and garnish with fresh cilantro.
