Ingredients
  

  • 16 wonton wrappers
  • 1/2 pound ground pork or chicken
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • 1 clove garlic minced
  • 4 cups chicken broth or vegetable broth
  • 2 tablespoons curry powder
  • 1 can coconut milk (14 oz)
  • 8 oz noodles your choice (such as egg noodles or ramen)
  • green onions sliced, for garnish, optional
  • cilantro for garnish optional

Method
 

  1. In a bowl, mix together the ground pork or chicken, soy sauce, sesame oil, ginger, and garlic. Place a small spoonful of the mixture in the center of each wonton wrapper and fold to form wontons. Set aside.
  2. In a large pot, bring the chicken or vegetable broth to a simmer. Add the curry powder and coconut milk, stirring to combine. Let simmer for about 10 minutes to allow the flavors to meld.
  3. Add the wontons to the broth and cook for about 5-7 minutes, or until the wontons are cooked through.
  4. In a separate pot, cook the noodles according to package instructions. Drain and divide among 4 bowls.
  5. Ladle the curry broth and wontons over the noodles in each bowl.
  6. Garnish with sliced green onions and cilantro.
  7. Serve hot and enjoy!
