Dhai Bhindhi is a traditional Asian dish made with okra, yogurt, and spices.

Ingredients
  

  • 4 cups okra cut into 1 inch pieces
  • 1 onion finely chopped
  • 2 tomatoes finely chopped
  • 1 cup yogurt
  • 2 tablespoons chickpea flour besan
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

Method
 

  1. Heat oil in a pan and fry okra until crispy and golden brown. Drain on a paper towel and set aside.
  2. In another pan, heat some oil and add cumin seeds. When they crackle, add chopped onions and sauté until they turn golden brown.
  3. Add chopped tomatoes and cook until they become soft and mushy.
  4. Add coriander powder, turmeric powder, red chili powder, garam masala, and salt to taste. Mix well and cook for 2-3 minutes.
  5. In a bowl, whisk together yogurt and chickpea flour until smooth.
  6. Add the yogurt mixture to the pan and stir well. Cook for a few minutes until the sauce thickens.
  7. Add fried okra to the sauce and mix well. Cook for another 2-3 minutes.
  8. Serve hot with rice or flatbread.
