Ingredients
- 1.5 pounds pork tenderloin cut into thin strips
- 1/4 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce

- Bamboo skewers soaked in water

- 1/2 cup peanut butter
- 1/4 cup coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon red curry paste (optional)
Instructions
- In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, garlic, curry powder, turmeric, coriander, and cumin. Add the pork strips and marinate for at least 1 hour or overnight in the refrigerator.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated pork strips onto the soaked bamboo skewers.
- Grill the skewers for about 3-4 minutes per side, or until the pork is cooked through and has nice grill marks.
- While the pork is cooking, prepare the peanut dipping sauce by combining all the sauce ingredients in a small saucepan over low heat. Stir until smooth and heated through.
