Banga soup is a traditional Nigerian dish made with palm fruit extract as the base. It is a rich and flavorful soup usually cooked with a variety of meat, fish, and vegetables, along with spices and herbs. Ingredients
  

  • 1 cup palm fruit extract (banga)
  • 1 lbs assorted meat (beef, goat meat, or poultry)
  • 2 cups stockfish and dried fish
  • 1 medium onion chopped
  • 2 teaspoons ground crayfish
  • 2 tablespoons ground pepper
  • 2 seasoning cubes
  • Salt to taste
  • Vegetables your choice (scent leaves or spinach)

Method
 

  1. In a pot, combine the palm fruit extract with water and bring to a boil. Let it simmer for about 30 minutes until the oil floats to the top.
  2. Add in the assorted meat, stockfish, dried fish, chopped onion, ground crayfish, pepper, seasoning cubes, and salt. Cover and let it cook for about 45 minutes to 1 hour until the meat is tender.
  3. Add the vegetables and let it cook for an additional 5-10 minutes.
  4. Taste and adjust seasoning if needed.
  5. Serve hot with your choice of starch.
  6. Enjoy!
