Chicken with pear sauce
Ingredients
- 4 chicken parts skinless breasts, legs and thighs
- 2 ripe pears peeled, cored, and diced
- 1/2 cup chicken broth
- 1/4 cup white wine
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 teaspoon minced garlic
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side. Remove chicken from the skillet and set aside.
- In the same skillet, add the diced pears and cook for 2-3 minutes until they start to soften.
- Add the chicken broth, white wine, honey, Dijon mustard, garlic, and thyme to the skillet. Stir to combine all the ingredients.
- Bring the sauce to a simmer and let it cook for 5-7 minutes until slightly thickened.
- Return the chicken breasts to the skillet and spoon some of the pear sauce over them. Let them simmer in the sauce for an additional 2-3 minutes.
- Serve the chicken with pear sauce over cooked rice or mashed potatoes. Garnish with fresh parsley.
- Enjoy!
