Homemade egg noodles

- In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour mixture.
- Crack the eggs into the well and whisk them slightly with a fork.
- Gradually incorporate the flour into the eggs until a dough forms.
- Knead the dough on a floured surface for about 5-10 minutes until smooth and elastic. If the dough is too dry, you can add a little water, one tablespoon at a time.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
- Roll out the dough on a floured surface until it is about 1/8 inch thick.
- Cut the dough into thin strips for noodles, or use a pasta machine if you have one.
- Allow the noodles to dry for about 30 minutes before cooking.
- To cook the noodles, simply boil them in salted water for 3-4 minutes until al dente. Drain and serve with your favorite sauce or in a soup.
