Ingredients

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • Water as needed

Method

  1. In a large mixing bowl, combine the flour and salt. Make a well in the center of the flour mixture.
  2. Crack the eggs into the well and whisk them slightly with a fork.
  3. Gradually incorporate the flour into the eggs until a dough forms.
  4. Knead the dough on a floured surface for about 5-10 minutes until smooth and elastic. If the dough is too dry, you can add a little water, one tablespoon at a time.
  5. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  6. Roll out the dough on a floured surface until it is about 1/8 inch thick.
  7. Cut the dough into thin strips for noodles, or use a pasta machine if you have one.
  8. Allow the noodles to dry for about 30 minutes before cooking.
  9. To cook the noodles, simply boil them in salted water for 3-4 minutes until al dente. Drain and serve with your favorite sauce or in a soup.
  10. Enjoy!
