Sweet and Sour Pork

- In a bowl, combine ketchup, rice vinegar, brown sugar, soy sauce, garlic, and cornstarch. Mix well and set aside.
- Heat vegetable oil in a pan for frying. Fry the pork pieces until they are golden brown and cooked through. Remove from the pan and set aside.
- In the same pan, sauté the bell peppers and onion until they are slightly softened.
- Add the pineapple chunks to the pan and cook for a few more minutes.
- Pour the sauce mixture over the vegetables and bring to a simmer. Cook until the sauce thickens.
- Add the cooked pork back to the pan and stir to coat everything in the sauce.
- Season with salt and pepper to taste.
- Serve the Sweet and Sour Pork hot over steamed rice. Enjoy!
