Ingredients
  

  • 1 lb pork loin cut into bite-sized pieces
  • 1 red bell pepper cut into chunks
  • 1 green bell pepper cut into chunks
  • 1 onion cut into chunks
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/3 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Vegetable oil for frying

Method
 

  1. In a bowl, combine ketchup, rice vinegar, brown sugar, soy sauce, garlic, and cornstarch. Mix well and set aside.
  2. Heat vegetable oil in a pan for frying. Fry the pork pieces until they are golden brown and cooked through. Remove from the pan and set aside.
  3. In the same pan, sauté the bell peppers and onion until they are slightly softened.
  4. Add the pineapple chunks to the pan and cook for a few more minutes.
  5. Pour the sauce mixture over the vegetables and bring to a simmer. Cook until the sauce thickens.
  6. Add the cooked pork back to the pan and stir to coat everything in the sauce.
  7. Season with salt and pepper to taste.
  8. Serve the Sweet and Sour Pork hot over steamed rice. Enjoy!
