Nothing says comfort on a cold winter day like a big pot of stew simmering on the stove. One bite warms you from head to toe. Like most soups and stews this one tastes even better the next day if you are lucky enough to have any left over.

  • Heat a large soup pot over medium heat. Add olive oil.
  • Once oil is hot, add beef and brown on all sides. This should take approximately 8 minutes.
  • Add onion, celery, and garlic. Season to taste with salt and pepper. Cook, stirring occasionally, until the vegetables are slightly soft and fragrant, approximately 3-4 minutes.
  • Add tomato paste, Worcestershire sauce, paprika, and thyme. Continue cooking for another 1-2 minutes.
  • Pour in the lager and beef stock. Cover with a lid and allow to simmer for 1 hour.
  • After beef has been simmering for one hour, add carrots and potatoes. Continue cooking until the carrots and potatoes are fork-tender, another 20-25 minutes. If at any point the stew gets too dry, add additional beef stock.
  • Remove from heat and serve with a sprinkle of fresh parsley. Enjoy!
