Ingredients
- 2 pounds cow's foot If not at supermarket check your local butcher shop. Cow foot is usually prepared by butcher with removal of hoof.
- 1 stalk scallion chopped
- 1 sprig thyme
- 1 medium carrot sliced
- 1 medium bell pepper chopped
- 1 whole Scotch bonnet pepper
- 1 can butter beans preferred Grace Butter Beans (TM)
- 1/2 teaspoon salt or salt to taste
- 1 teaspoon garlic crushed or chopped
- sprinkle ground black pepper
- 1 teaspoon soy sauce
- 1/2 teaspoon Grace® Browning (TM)
- 1/4 teaspoon allspice crushed
- 2 tablespoon vegetable oil
Instructions
- Wash cow foot and add garlic, allspice, onion, thyme, scallion, pinch of black pepper and salt. Add soy sauce and Grace Browning (enough to give meat a brown color). Mix and allow to stand for 1 hour.
- Add oil to pressure cooker pot and bring to medium heat uncovered. Add cow foot mixture and stir fry until brown. Add water to just cover meat, cover pressure cooker and pressure for 20 minutes. When meat is cooked, it separates from bone easily. Add additional 5-10 minutes pressuring to bring to desired tenderness if needed.
- Transfer meat to a large skillet. Add sliced carrots, sweet pepper and scotch bonnet pepper. Add canned broad beans and simmer for 10 minutes.
- Serve with plain rice or rice and red peas.
