Koshari is a popular Egyptian dish that combines rice, lentils, and macaroni topped with a spicy tomato sauce and garnished with crispy fried onions. It's a delicious and hearty meal that is enjoyed by many in Egypt and beyond.

Ingredients
  

  • 1 cup rice
  • 1 cup brown lentils
  • 1 cup elbow macaroni
  • 1 can tomatoes chopped
  • 1 large onion thinly sliced
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
Optional for extra spice:
  • hot sauce
  • chili flakes

Method
 

  1. Cook the rice and lentils separately according to package instructions until they are both cooked through but still slightly firm.
  2. Cook the macaroni according to package instructions and set aside.
  3. In a large saucepan, heat the olive oil over medium heat. Add the sliced onions and cook until they are caramelized and crispy.
  4. Add the minced garlic, cumin, paprika, salt, and pepper to the onions. Cook for another minute until fragrant.
  5. Add the chopped tomatoes to the saucepan and simmer for 10-15 minutes until the sauce thickens slightly.
  6. To serve, layer the rice, lentils, and macaroni in a bowl. Top with the spicy tomato sauce and garnish with the crispy onions.
  7. Serve hot with extra hot sauce or chili flakes if desired.
