- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons Herbs de Provence
- 2 tablespoons olive oil
- Salt and pepper to taste

- 1 lemon halved

- Place the chicken in a roasting pan and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown and crispy.
- Let the chicken rest for 10-15 minutes before carving and serving.
