- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter melted
- 16 oz cream cheese softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract

- 1/2 cup apricot preserves

Instructions
- Preheat your oven to 350°F (175°C).

- In a separate bowl, beat the cream cheese and 1/2 cup of sugar until smooth.

- Pour the cream cheese mixture over the graham cracker crust.
- Bake for about 30-35 minutes, or until the center is set.
- Let the pie cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Just before serving, spread the apricot preserves over the top of the cheesecake pie.
