Spicy Pumpkin Chicken Casserole
Ingredients
- 2 cups Fresh Pumpkin or Butternut Squash cut into 1” cubes
- 1 cup Potato cut into 1” cubes
- 1 lb. Chicken thighs cut into bite size pieces
- 1 tablespoon Hot paprika
- 1 tablespoon Sriracha sauce
- 1/2 teaspoon Chili flakes
- 1/4 cup Extra virgin olive oil
- Sea Salt to taste

Instructions
- Add diced pumpkin, potatoes, chicken, paprika, chili flakes, sriracha, and olive oil to a large bowl. Season to taste with salt. Combine well.
- Set aside and let marinate for 30 minutes in the refrigerator.
- Meanwhile, preheat the oven to 400°F.
- When ready to bake pour the marinated chicken into a 9 x 13 inch baking dish. Cover with aluminum foil.
- Bake for 20 minutes. Remove the foil and bake until golden brown and tender, approximately 15-20 additional minutes.
- Remove from oven. Serve with rice and broccoli. Enjoy!
