Ingredients
- 1 cup gram flour (besan)
- 1/2 cup semolina (sooji)
- 1 tablespoon ginger-green chili paste
- 1 tablespoon sugar
- 1 teaspoon turmeric powder
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon fruit salt (eno)
- 1 cup water
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- Fresh coriander leaves for garnish
Instructions
- In a mixing bowl, combine gram flour, semolina, ginger-green chili paste, sugar, turmeric powder, salt, and lemon juice.
- Gradually add water to make a smooth batter. Let it rest for 15-20 minutes.
- Grease a steaming pan or dish. Fill a steamer or a pot with water and bring it to a boil.
- In a small bowl, mix fruit salt (eno) with a little water and quickly add it to the batter. Mix well to incorporate.
- Pour the batter into the greased pan and place it in the steamer. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
- Once cooked, remove from heat and let it cool slightly.
- In a small pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and sauté for a few seconds.
- Pour this tempering over the steamed dhokla.
- Cut the dhokla into squares or diamond shapes. Garnish with fresh coriander leaves.
- Serve the Yellow Khaman Dhokla warm with green chutney or ketchup.
