  • In a mixing bowl, combine gram flour, semolina, ginger-green chili paste, sugar, turmeric powder, salt, and lemon juice.
  • Gradually add water to make a smooth batter. Let it rest for 15-20 minutes.
  • Grease a steaming pan or dish. Fill a steamer or a pot with water and bring it to a boil.
  • In a small bowl, mix fruit salt (eno) with a little water and quickly add it to the batter. Mix well to incorporate.
  • Pour the batter into the greased pan and place it in the steamer. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.
  • Once cooked, remove from heat and let it cool slightly.
  • In a small pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and sauté for a few seconds.
  • Pour this tempering over the steamed dhokla.
  • Cut the dhokla into squares or diamond shapes. Garnish with fresh coriander leaves.
