Thai Peanut Chicken and vegetables

Method
- In a small bowl, mix together peanut butter, soy sauce, honey, garlic, ginger, red pepper flakes, and chicken broth to make the sauce. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Add sliced chicken and cook until browned and cooked through.
- Add the mixed vegetables to the skillet and cook until slightly tender.
- Pour the peanut sauce over the chicken and vegetables. Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve the Thai Peanut Chicken and Vegetables over cooked rice or noodles. Garnish with chopped peanuts and cilantro if desired.
