Ingredients
  

  • 1 pound chicken breast thinly sliced
  • 2 cups mixed vegetables (such as bell peppers, broccoli, carrots)
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • peanuts chopped and cilantro for garnish (optional)

Method
 

  1. In a small bowl, mix together peanut butter, soy sauce, honey, garlic, ginger, red pepper flakes, and chicken broth to make the sauce. Set aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add sliced chicken and cook until browned and cooked through.
  3. Add the mixed vegetables to the skillet and cook until slightly tender.
  4. Pour the peanut sauce over the chicken and vegetables. Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve the Thai Peanut Chicken and Vegetables over cooked rice or noodles. Garnish with chopped peanuts and cilantro if desired.
