Ingredients
  

  • 400 g flat rice noodles
  • 250 g shrimp peeled and deveined
  • 200 g chicken breast sliced
  • 2 cups bean sprouts
  • 1 red bell pepper sliced
  • 4 cloves garlic minced
  • 2 eggs
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Vegetable oil for cooking

Method
 

  1. Cook the flat rice noodles according to package instructions. Drain and set aside.
  2. In a wok or large pan, heat some vegetable oil over medium-high heat. Add the minced garlic and stir-fry until fragrant.
  3. Add the chicken slices and cook until they are no longer pink.
  4. Push the chicken to one side of the wok and crack the eggs into the other side. Scramble the eggs until cooked through.
  5. Add the shrimp to the wok and cook until they turn pink.
  6. Stir in the sliced bell pepper and bean sprouts. Cook for another 2-3 minutes until the vegetables are slightly tender.
  7. Add the cooked rice noodles to the wok, followed by the soy sauce, oyster sauce, dark soy sauce, sugar, salt, and pepper. Toss everything together until well combined and heated through.
  8. Taste and adjust seasoning if needed.
  9. Serve hot and enjoy!
