Crostata alla ricotta is a traditional Italian dessert made with a sweet pastry crust and a creamy ricotta cheese filling. It’s typically flavored with sugar, lemon zest, and sometimes chocolate chips or candied fruit.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter cold and cubed
  • 1 egg
  • 1 cup ricotta cheese
  • 1/4 cup sugar
  • 1 lemon zest
  • 1/4 cup chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, combine the flour and 1/2 cup of sugar. Add the cold butter and rub it into the flour mixture until it resembles breadcrumbs.
  3. Add the egg and mix until the dough comes together. Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. In another bowl, mix the ricotta cheese, 1/4 cup of sugar, lemon zest, and chocolate chips if using.
  5. Roll out the pastry dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
  6. Spread the ricotta mixture evenly over the pastry.
  7. Bake in the preheated oven for about 30-35 minutes, or until the crust is golden brown.
  8. Allow the crostata to cool before slicing and serving.
