Lyulya kebab, also known as Luleh Kebab, is a popular dish in Azerbaijani, Turkish, and Middle Eastern cuisine. It consists of seasoned ground meat, typically lamb or beef, mixed with various herbs and spices. The meat mixture is then shaped onto skewers and grilled to perfection. Ingredients
  

  • 1 pound ground lamb or beef
  • 1 onion grated
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • Olive oil for grilling

Method
 

  1. In a mixing bowl, combine the ground meat, grated onion, minced garlic, cumin, paprika, coriander, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  2. Cover the bowl and let the meat mixture marinate in the fridge for at least 30 minutes to allow the flavors to meld.
  3. Preheat the grill to medium-high heat. If you’re using wooden skewers, make sure to soak them in water for about 30 minutes to prevent them from burning.
  4. Take a handful of the meat mixture and mold it onto a skewer, shaping it into a long, narrow sausage-like form. Repeat with the remaining meat mixture.
  5. Lightly brush the kebabs with olive oil to prevent sticking on the grill.
  6. Grill the kebabs for about 4-5 minutes per side, or until they are cooked through and have nice grill marks.
  7. Serve the lyulya kebabs hot with flatbread, salad, and your favorite sauces.
  8. Enjoy!
