Gutab is delicious Azerbaijani dish. Gutab is a type of savory pastry that is typically filled with minced meat, herbs, and spices.

Ingredients
  

For the dough:
  • 2 cups all-purpose flour
  • 1/2 tablespoon salt
  • 1/2 cup warm water
For the filling:
  • 1 lb ground beef or lamb
  • 1 onion finely chopped
  • 1/2 cup mixed herbs (such as parsley, dill)
  • Salt and pepper other spices to taste

Method
 

  1. In a bowl, combine the flour and salt. Slowly add the warm water and knead the dough until smooth. Cover and let it rest for 30 minutes.
  2. In a skillet, cook the ground meat and onion until browned. Add the chopped herbs and season with salt, pepper, and any other spices you like.
  3. Divide the dough into small balls and roll them out into thin circles.
  4. Place a spoonful of the meat mixture in the center of each circle and fold over to form a half-moon shape. Press the edges to seal.
  5. Heat a skillet over medium heat and cook the gutab on both sides until golden brown and crispy.
  6. Serve hot with yogurt, Kükü or a side salad.
  7. Enjoy!
