Ingredients
- 1.5 lbs beef stew meat cut into bite-sized pieces
- 2 tablespoons Massaman curry paste
- 1 can can coconut milk (13.5 oz)
- 1 large onion sliced
- 2 potatoes peeled and cubed
- 1/2 cup roasted peanuts
- 2 tablespoons brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon tamarind paste
- 1 cinnamon stick
- 2-3 cardamom pods
- 2-3 whole cloves
- 1 bay leaf
- Vegetable oil
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions
- Heat some vegetable oil in a large pot over medium heat. Add the curry paste and cook for a minute until fragrant.
- Add the beef to the pot and stir to coat with the curry paste. Cook until the beef is browned on all sides.
- Pour in the coconut milk and add the cinnamon stick, cardamom pods, cloves, and bay leaf. Bring to a simmer.
