Method
- In a large pot, heat some olive oil over medium heat. Add the onion, carrots, leek, celery, and tomato. Cook until softened.
- Add the pork ribs and beef stew meat to the pot and brown on all sides.
- Add enough water to cover the ingredients in the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until the meat is tender.
- Add the potatoes and chickpeas to the pot and continue to simmer for another 30 minutes.
- Add the rice or small pasta to the pot and cook until tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy your delicious Escudella!
