Ingredients
  

  • 1 lb pork ribs
  • 1 lb beef stew meat
  • 1 onion chopped
  • 2 carrots peeled and chopped
  • 2 potatoes peeled and chopped
  • 1 leek chopped
  • 1 celery stalk chopped
  • 1 tomato chopped
  • 1/2 cup chickpeas (canned or cooked)
  • 1/2 cup rice or small pasta (like noodles or small shells)
  • Salt and pepper to taste

  • Olive oil

Method
 

  1. In a large pot, heat some olive oil over medium heat. Add the onion, carrots, leek, celery, and tomato. Cook until softened.
  2. Add the pork ribs and beef stew meat to the pot and brown on all sides.
  3. Add enough water to cover the ingredients in the pot. Bring to a boil, then reduce heat and simmer for about 1 hour or until the meat is tender.
  4. Add the potatoes and chickpeas to the pot and continue to simmer for another 30 minutes.
  5. Add the rice or small pasta to the pot and cook until tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy your delicious Escudella!
