Method
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, combine the chicken, sweet potatoes, taro root, yam, onion, tomatoes, and bell pepper.
- Season with salt and pepper, then pour in the coconut milk. Mix everything together until well combined.
- Cut the banana leaves or aluminum foil into large squares.
- Place a generous portion of the chicken and vegetable mixture in the center of each leaf or foil.
- Fold the leaves or foil over the mixture to form a packet, making sure to seal it tightly.
- Place the packets on a baking sheet and transfer to the oven. Bake for about 1 to 1.5 hours, or until the chicken is cooked through and the vegetables are tender.
- Carefully open the packets and serve the Bougna hot. Enjoy!
