Bougna is a traditional Melanesian dish originating from the islands of Vanuatu. Ingredients
  

  • 1 lb boneless chicken thighs cut into chunks
  • 1 lb sweet potatoes peeled and cubed
  • 1 lb taro root peeled and cubed
  • 1 lb yam peeled and cubed
  • 1 onion sliced
  • 2 tomatoes sliced
  • 1 bell pepper sliced
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Banana leaves or aluminum foil for wrapping

Method
 

  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, combine the chicken, sweet potatoes, taro root, yam, onion, tomatoes, and bell pepper.
  3. Season with salt and pepper, then pour in the coconut milk. Mix everything together until well combined.
  4. Cut the banana leaves or aluminum foil into large squares.
  5. Place a generous portion of the chicken and vegetable mixture in the center of each leaf or foil.
  6. Fold the leaves or foil over the mixture to form a packet, making sure to seal it tightly.
  7. Place the packets on a baking sheet and transfer to the oven. Bake for about 1 to 1.5 hours, or until the chicken is cooked through and the vegetables are tender.
  8. Carefully open the packets and serve the Bougna hot. Enjoy!
