Bougna is a traditional Melanesian dish originating from the islands of Vanuatu. It typically consists of meat, such as chicken, pork, or seafood, mixed with root vegetables like taro, sweet potato, and yam, along with coconut milk and various seasonings. The ingredients are wrapped in banana leaves or foil, then cooked slowly in an earth oven or baked in a conventional oven. Instructions
Preheat your oven to 350°F (180°C).
In a large mixing bowl, combine the chicken, sweet potatoes, taro root, yam, onion, tomatoes, and bell pepper.
Season with salt and pepper, then pour in the coconut milk. Mix everything together until well combined.
Cut the banana leaves or aluminum foil into large squares.
Place a generous portion of the chicken and vegetable mixture in the center of each leaf or foil.
Fold the leaves or foil over the mixture to form a packet, making sure to seal it tightly.
Place the packets on a baking sheet and transfer to the oven. Bake for about 1 to 1.5 hours, or until the chicken is cooked through and the vegetables are tender.
Carefully open the packets and serve the Bougna hot. Enjoy!
