Fuchka

Fuchka, also known as pani puri or golgappa, is a popular street food in South Asia. It consists of hollow, crispy puri shells filled with a spicy and tangy mixture of flavored water, tamarind chutney, chickpeas, potatoes, and spices.

Ingredients
  

  • 1 cup semolina (sooji)
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • Salt to taste
  • Oil for frying
  • 1 cup chickpeas boiled
  • 2 medium-sized potatoes boiled, mashed
  • 1/2 cup tamarind chutney
  • 1/2 cup mint-coriander chutney
  • Chaat masala
  • Red chili powder
  • Chopped cilantro for garnish
  • Pani puri masala (optional)

Method
 

  1. In a bowl, mix the semolina, all-purpose flour, salt, and water to form a smooth dough. Cover and let it rest for 30 minutes.
  2. Divide the dough into small balls and roll them out into small puris.
  3. Heat oil in a pan and fry the puris until they puff up and turn golden brown. Drain on paper towels.
  4. To assemble, gently poke a hole in the top of each puri, fill with a spoonful of chickpeas and mashed potatoes.
  5. Drizzle with tamarind chutney and mint-coriander chutney.
  6. Sprinkle with chaat masala, red chili powder, and pani puri masala (if using).
  7. Garnish with chopped cilantro and serve immediately.
  8. Enjoy!
